<p><strong>উপকরণ:</strong></p>



<ul><li>ময়দা: ৫০০ গ্রাম</li><li>ঘি: ১০০ গ্রাম</li><li>নারকেল কোড়া: ১৫০ গ্রাম</li><li>চিনি: পরিমাণ অনুযায়ী</li><li>খাবার সোডা: অল্প পরিমাণ</li><li>সাদা তেল: ২০০ গ্রাম</li></ul>



<p><strong>পদ্ধতি:</strong></p>



<p>প্রথমে ময়দা নিয়ে তাতে বেশ খানিকটা ঘি, নারকেল কোড়া, অল্প চিনি আর সামান্য খাবার সোডা দিয়ে ভালো করে মেখে নিন।</p>



<p>এবার তার থেকে একটা বড় লেচি কেটে ময়দা দিয়ে বেলে নিন।</p>



<p>এরপর একটা ছুরি দিয়ে তার থেকে ছোট ছোট চৌকো টুকরো করে কেটে নিন।</p>



<p>তারপর কড়াই-এ সাদাতেল আর ঘি একসাথে মিশিয়ে গরম হতে দিন।</p>



<p>গরম হয়ে গেলে আঁচ কমিয়ে গজা গুলো কড়া করে ভেজে তুলে নিলেই রেডি নারকেলের খাস্তা গজা।</p>

<p><strong>প্রণালী:</strong></p>



<p>প্রথমে
 সুজি টাকে ঘি-এ ভালো করে ভেজে তুলে রাখুন। এরপর কড়াই এ সাদা তেল দিয়ে সাদা
 সরষে, কারি পাতা, শুকনো লঙ্কা, অল্প কলাই ডাল আর ছোলার ডাল ফোড়ন দিয়ে দিন।
 এবার একটু নেড়ে পেঁয়াজ কুচি, গাজর, বিনস, টমেটো কুচি দিয়ে তাতে অল্প হলুদ,
 নুন, চিনি আর গ্রেট করা আদা দিয়ে ভালো করে নাড়তে থাকুন।</p>



<p>এবার একটা 
বাটিতে টক দই নিয়ে বেশ অনেকটা পরিমান জল দিয়ে ভাল করে ফেটিয়ে নিয়ে ওই সবজির
 উপর ঢেলে দিয়ে ঢাকা দিয়ে রাখুন বেশ কিছুক্ষণ sim আঁচে। তারপর ঢাকা খুলে 
কাঁচা লঙ্কা ছোট ছোট করে কেটে দিয়ে দিন।</p>



<p>এবার ভেজে রাখা সুজিটাও দিয়ে দিন।</p>



<p>এরপর ভালো করে নেড়ে শুকনো শুকনো করে নামিয়ে নিন।</p>



<p>ব্যাস গরম গরম রেডি হয়ে গেল উপমা বা নোনতা সুজি।</p>

<p>Firstly heat up some white oil in a pan and add onion, ginger and garlic paste to it. After stirring a bit add the coriander leaves-green chilies combo paste and cook for a bit and then add garam masala powder, salt &amp; sugar and daal paste to it and make the stuffing by stirring the whole mixture well.</p>
<p>Now mix the maida flour and cut some lechis from it and put the readied stuffing inside the lechis and then roll and fry those lechis in white oil and the Kachoris of Arhar Daal will be ready.</p>
<p>Now serve the hot and tasty Kachoris of Arhar Daal with sauce and salad.</p>

<p>Firstly mix the circular pieces of the sliced brinjal with salt, turmeric, a bit of chilly powder, sugar and dry maida flour and fry those well in mustard oil and put them out. Now take some curd in a bowl and add sugar and salt to it and mix it well. Now add a bit of ginger paste and chilly powder to the fried oil of the brinjal and fry it for some time and then pour the whole curd to that and cook for some time and then pour the whole mixture on top of the fried brinjals. Then garnish with some chopped coriander leaves and green chillies and your Doi Begun will be ready to serve.</p>

<p>Heat 2 spoons of ghee in a pan and put the cashew &amp; raisin in that and fry and then add 2 spoons of sugar and 2 spoons of milk to that and stir those well for some time. Then add the small pieces of the chopped fruits to that and stir it well. Then add approximately 125gm of the steamed Dehradun rice and stir and then add 1 small cup of khoya kheer to it and lastly add some salt to taste and mix the whole thing well and in a moment your Kashmiri Pulao will be ready to serve.</p>
